A gift for you: the recipe for cappelletti in broth

Guess what is the traditional Christmas dish in Romagna?

Come on!

Okay, we'll tell you :)   . . . The Cappelletti in broth!

Someone say that they are called in this way because of their hat shape (cappelletti= little hats), someone else because they are inspired by the navel of Venus. Not so many years ago, they were eaten during the most important holidays only and always in broth.

Here is the list of ingredients.

Ingredients to prepare the dough. In Romagna we use to put one egg per person, so we are giving you the recipe for 3 servings:

  1. 300 gr of flour 00
  2. 3 eggs

Ingredients to prepare the filling for the cappelletti:

  1. 180 gr of cottage cheese
  2. half a turkey breast
  3. 30 gr of grated Parmesan cheese
  4. 1 whole egg and 1 yolk
  5. nutmeg, salt, pepper and lemon rind

 

Ready to put your hands to the dough? It starts with the preparation.

Let's start with the preparation of the pasta. On a wooden chopping board, place the flour in the shape of volcano and insert the 3 eggs inside.

Knead - using all your brute force :P - until you get an elastic dough. While you rest the dough covered with a cloth at room temperature, how about starting to prepare the filling of our cappelletti?

Take the half-breasted turkey and chop it finely. Combine the other ingredients until you get a homogeneous mix.

Shall we return to our dough? It's time to roll it out. Take the rolling pin and roll out the dough, and cut it into small squares. Place the filling in the centre and fold it in half to form a triangle. To finish, take the two ends of the triangle and put them together.

Et voilà! Here is your first cappelletto.
